Karen's Zucchini Relish

Total Time: 3 hrs 5 mins Preparation Time: 45 mins Cook Time: 2 hrs 20 mins

Ingredients

  • 2 cups chopped zucchini
  • 1 cup chopped onion
  • 1/2 cup chopped sweet green pepper
  • 1/2 cup chopped sweet red pepper
  • 2 tablespoons salt
  • 1 3/4 cups sugar
  • 2 teaspoons celery seeds
  • 1 teaspoon mustard seeds
  • 1 cup cider vinegar

Recipe

  • 1 combine zucchini, onion, green and red peppers; sprinkle with salt, cover cold water.
  • 2 let stand 2 hours. drain: rinse and drain thoroughly.
  • 3 combine remaining ingredients in a large saucepot. bring to a boil.
  • 4 add vegetables: simmer 10 minutes.
  • 5 pack hot relish into hot jars, leaving 1/4 inch head space.
  • 6 remove any air bubbles. adjust 2-piece caps.
  • 7 process 10 minutes in a boiling-water canner.
