Mediterranean-style Vegetables

Ingredients

  • Servings: 4
  • 1 cup zucchini, sliced
  • 1 cup yellow squash, sliced
  • 2 cups bell peppers, sliced (i use a mixture of red, yellow, and green)
  • 2 cups broccoli florets
  • 1/4 cup vegetable broth
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon pepper
  • 3 medium tomatoes, chopped

Recipe

  • 1 comine all ingredients except tomatoes in a large saucepan and bring to a boil.
  • 2 reduce heat, cover, and simmer for about 8 minutes or till vegetables are crisp-tender.
  • 3 stir in tomatoes and serve.
