Penne Vegetable Carbonarra Inspired Pasta

Ingredients

- 8 ounces penne
- 2 eggs
- 2 tablespoons butter
- 1 tablespoon mayonnaise
- 2 teaspoons dijon mustard
- 2 cups brussels sprouts
- 2 cups kale
- 2 zucchini
- 1 tablespoon garlic
- 1 teaspoon salt and pepper
- 1 slice american cheese
Recipe
- 1 cooke vegetables until tender.
- 2 salt pasta water well, cook noodles until tender, do not rinse and save 1/2 cup pasta water.
- 3 whip eggs through dijon.
- 4 put hot noodles in a large bowl.
- 5 pour egg mix on noodles and put your cheese slice on top.
- 6 put hot veggies on top and mix everything together.
- 7 add reserved pasta water, little at a time.
- 8 let sit for a minute, then eat.
- 9 important: pasta must be very hot in order to cook your eggs.
