Penne Vegetable Carbonarra Inspired Pasta

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 ounces penne
  • 2 eggs
  • 2 tablespoons butter
  • 1 tablespoon mayonnaise
  • 2 teaspoons dijon mustard
  • 2 cups brussels sprouts
  • 2 cups kale
  • 2 zucchini
  • 1 tablespoon garlic
  • 1 teaspoon salt and pepper
  • 1 slice american cheese

Recipe

  • 1 cooke vegetables until tender.
  • 2 salt pasta water well, cook noodles until tender, do not rinse and save 1/2 cup pasta water.
  • 3 whip eggs through dijon.
  • 4 put hot noodles in a large bowl.
  • 5 pour egg mix on noodles and put your cheese slice on top.
  • 6 put hot veggies on top and mix everything together.
  • 7 add reserved pasta water, little at a time.
  • 8 let sit for a minute, then eat.
  • 9 important: pasta must be very hot in order to cook your eggs.
