Jujube Butter

Total Time: 1 hr Preparation Time: 45 mins Cook Time: 15 mins

Ingredients

  • 6 pints chinese jujubes
  • 5 cups sugar (more, to taste)
  • 2 teaspoons cinnamon
  • 1 lemon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon clove
  • 1/4 pint vinegar

Recipe

  • 1 boil fruit until tender in sufficient water to cover it.
  • 2 rub cooked fruit through a sieve or colander to remove the skin and seeds.
  • 3 cook slowly until thick, put in jars, leaving 1/2" headspace.
  • 4 wipe rim, cover and screw on bands; process in boiling water bath 15 minutes.
