Lime Parfait Pie

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 1 (6 ounce) package lime gelatin
  • 2 cups boiling water
  • 1 teaspoon shredded lime peel
  • 1/3 cup lime juice
  • 1 quart vanilla ice cream
  • 1 baked 10-inch pie shell

Recipe

  • 1 dissolve gelatin in boiling water.
  • 2 stir in lime peel and juice.
  • 3 add ice-cream by spoonfuls, stirring until melted.
  • 4 chill in the fridge until mixture mounds.
  • 5 spoon into the baked and cooled pie shell.
  • 6 chill in the fridge until firm.
  • 7 decorate with whipped cream and marachino cherries, if desired.
