Mexican Bean Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 tablespoons butter
  • 1/4 cup chopped onion
  • 2 carrots, diced
  • 1 medium zucchini, cubed
  • 1 (16 ounce) can fat-free refried beans
  • 1 (14 1/2 ounce) can chicken broth
  • 1 chicken breast

Recipe

  • 1 spray the bottom of a soup pot with cooking spray and cook chicken breast.
  • 2 cut in small chunks and set aside.
  • 3 melt butter in bottom of soup pot and saute onion, carrots, and zucchini until tender.
  • 4 add remaining ingredients and simmer.
  • 5 serve with a warm tortilla and your choice of toppings such as; cheese, salsa, cilanto, jalepinos,& avacados.
