Mexican Couscous

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 3
  • 1 (10 ounce) box couscous
  • 1 medium zucchini
  • 1 (14 ounce) can del monte crushed tomatoes with mild green chilies

Recipe

  • 1 prepare couscous in sauce pan by bringing 1 1/2 cups of water to boil.
  • 2 place zucchini in a steamer basket over boiling water. cover saucepan and steam 5-7 mins or until zucchini is bright green and tender.
  • 3 mix couscous and tomatoes and pour over zucchini and serve hot or cold.
