Quick Zucchini Casserole

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 large zucchini, sliced into 14 inch rounds
  • 3 cups boiling water, enough to cover zucchini
  • 1/2 cup butter or 1/2 cup margarine
  • 2/3 cup low-fat sour cream
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 1/2 cup cheddar cheese

Recipe

  • 1 place zucchini in boiling water and boil for 2 minutes. drain into a colander.
  • 2 melt butter over low heat, remove from heat and stir in sour cream, salt and pepper.
  • 3 add zucchini and heat through.
  • 4 put mixture in a casserole dish, sprinkle with cheese. place under the broiler until cheese is melted and golden brown.
