Quick Zucchini Casserole

Ingredients
- Servings: 4
- 1 large zucchini, sliced into 14 inch rounds
- 3 cups boiling water, enough to cover zucchini
- 1/2 cup butter or 1/2 cup margarine
- 2/3 cup low-fat sour cream
- 1/2 teaspoon salt
- 1 dash pepper
- 1/2 cup cheddar cheese
Recipe
- 1 place zucchini in boiling water and boil for 2 minutes. drain into a colander.
- 2 melt butter over low heat, remove from heat and stir in sour cream, salt and pepper.
- 3 add zucchini and heat through.
- 4 put mixture in a casserole dish, sprinkle with cheese. place under the broiler until cheese is melted and golden brown.
