Marinated Zucchini Cubes

Ingredients

• 1/4 cup red wine vinegar
• 1/4 cup dry red wine
• 1/4 cup honey
• 1 tablespoon red onion, chopped
• 1 tablespoon worcestershire sauce
• 1 tablespoon olive oil
• 1/2 teaspoon chili powder
• 1/2 teaspoon ground cumin
• 1/4 teaspoon ground red pepper
• 1 garlic clove, minced
• 4 cups zucchini, diced

Recipe

• 1 mix all ingredients except zucchini in a large glass bowl. microwave at high for 2 minutes. stir in zucchini. cover and chill, at least 2 hours.
• 2 serve with a slotted spoon to drain.
