Marinated Zucchini & Mint

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 4 medium zucchini, cut in half and quartered lengthways
  • 1 cup mint leaf
  • 1 garlic clove, finely sliced
  • 1 tablespoon red wine vinegar

Recipe

  • 1 heat olive oil in pan.
  • 2 saute zucchini 4-5 minutes until lightly browned.
  • 3 transfer to bowl and add half of the mint, garlic and red wine vinegar. season to taste and stand 5 minutes.
  • 4 just before serving, stir through remaining mint.
