Marinated Zucchini & Mint

Ingredients
- Servings: 4
- 1 tablespoon olive oil
- 4 medium zucchini, cut in half and quartered lengthways
- 1 cup mint leaf
- 1 garlic clove, finely sliced
- 1 tablespoon red wine vinegar
Recipe
- 1 heat olive oil in pan.
- 2 saute zucchini 4-5 minutes until lightly browned.
- 3 transfer to bowl and add half of the mint, garlic and red wine vinegar. season to taste and stand 5 minutes.
- 4 just before serving, stir through remaining mint.
