Pumpernickel Bread For The Breadmaker

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • 1 1/2 cups warm water
  • 1 1/2 tablespoons vegetable oil
  • 2 tablespoons molasses
  • 1 1/2 teaspoons salt
  • 1 1/2 cups rye flour
  • 1 1/2 cups bread flour
  • 1 cup whole wheat flour
  • 1/3 cup gluten
  • 1/4 cup powdered milk
  • 1 tablespoon caraway seed (optional)
  • 1 tablespoon cocoa
  • 2 teaspoons active dry yeast

Recipe

  • 1 place all ingredients in the breadmaker in the order given.
  • 2 process according to manufacturer's instructions, using the whole wheat setting.
  • 3 for a darker bread you can increase the cocoa up to 50%.
