Quick Chicken And Shells With Fresh Mozzarella Cubes

Ingredients

- 1/2 cup fresh mozzarella cheese, cut into small cubes
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 1/4 cup parmesan cheese, fresh grated
- 2 cups chicken, shredded
- 2 cups whole wheat pasta, your favorite shape
- 1/2 cup grape tomatoes, cut in half
- 1/4 cup zucchini, cut into bite sized pieces
- 2 tablespoons extra virgin olive oil
- salt
- pepper
Recipe
- 1 cook pasta according to package directions minus 2 minutes and drain, reserving 1 cup of the pasta water.
- 2 in a deep saute pan, melt olive oil over medium heat. add zucchini and tomatoes. cook 4-5 minutes. add chicken, pasta, pasta water, and parmesan cheese. cook for another 2-3 minutes. remove from heat and add herbs and mozzarella cheese.
- 3 season to your liking. serve and enjoy!
