Ramen Noodle- Chinese Fried "rice"

Ingredients
- Servings: 2
- 2 (3 ounce) packages oriental-flavor instant ramen noodles
- 1 cup mixed peas and carrots (i use canned but i have used frozen and at times, fresh)
- 2 eggs
- 1 tablespoon olive oil
- 2 tablespoons soy sauce (or more to taste)
Recipe
- 1 cook noodles according to package directions and drain.
- 2 place oil in a pan.
- 3 add the veggies and saute about two minutes or until done to your likeness.
- 4 add eggs to veggie mixture and stir.
- 5 cook until eggs are done.
- 6 add soy sauce to mixture.
- 7 put noodles in pan and add both packets of seasoning.
- 8 add more soy sauce if you like.
- 9 mix and enjoy.
