Layered Zucchini & Yellow Squash Casserole

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 2 medium yellow squash, thinly sliced
  • 2 medium zucchini, thinly sliced
  • 1 medium onion, thinly sliced
  • 1/2 large green bell pepper, sliced in strips
  • 1 cup fresh mushrooms, sliced
  • 1 large tomato, sliced
  • salt and pepper, to taste
  • 2 tablespoons butter
  • 2 tablespoons grated parmesan cheese

Recipe

  • 1 lightly grease an 8 inch square baking pan (or spray with pam).
  • 2 layer the vegetables in the order listed, sprinkling each layer with salt and pepper as desired.
  • 3 dot the top with butter, and sprinkle with parmesan cheese.
  • 4 bake at 350f for 35 minutes or until crisp-tender.
