Layered Zucchini & Yellow Squash Casserole

Ingredients
- Servings: 6
- 2 medium yellow squash, thinly sliced
- 2 medium zucchini, thinly sliced
- 1 medium onion, thinly sliced
- 1/2 large green bell pepper, sliced in strips
- 1 cup fresh mushrooms, sliced
- 1 large tomato, sliced
- salt and pepper, to taste
- 2 tablespoons butter
- 2 tablespoons grated parmesan cheese
Recipe
- 1 lightly grease an 8 inch square baking pan (or spray with pam).
- 2 layer the vegetables in the order listed, sprinkling each layer with salt and pepper as desired.
- 3 dot the top with butter, and sprinkle with parmesan cheese.
- 4 bake at 350f for 35 minutes or until crisp-tender.
