Light Healthy Fried Rice With Bacon

Ingredients
- Servings: 1
- 1/2 onion
- 1/2 red bell pepper (capsicum)
- 2 bacon, middle bacon rashers fat trimmed & sliced
- 1 garlic clove
- 3/4 cup broccoli
- 1/2 cup carrot
- 3/4 cup cooked rice (0.25 cup raw makes up 0.75 cup cooked rice)
- 2 teaspoons soy sauce
- 1 tablespoon sweet chili sauce
Recipe
- 1 cook rice.
- 2 chop broccoli and carrot to small chunks and cook.
- 3 cook garlic, onion, capsicum and bacon in pan, using enough water to stop it sticking, if required.
- 4 add vegetables, soy sauce and sweet chili sauce to pan and stir until warmed through.
