Light Healthy Fried Rice With Bacon

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • Servings: 1
  • 1/2 onion
  • 1/2 red bell pepper (capsicum)
  • 2 bacon, middle bacon rashers fat trimmed & sliced
  • 1 garlic clove
  • 3/4 cup broccoli
  • 1/2 cup carrot
  • 3/4 cup cooked rice (0.25 cup raw makes up 0.75 cup cooked rice)
  • 2 teaspoons soy sauce
  • 1 tablespoon sweet chili sauce

Recipe

  • 1 cook rice.
  • 2 chop broccoli and carrot to small chunks and cook.
  • 3 cook garlic, onion, capsicum and bacon in pan, using enough water to stop it sticking, if required.
  • 4 add vegetables, soy sauce and sweet chili sauce to pan and stir until warmed through.
