Moroccan Garlic Chicken

Ingredients

- 4 boneless skinless chicken breast halves
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon butter or 1 tablespoon margarine
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 medium zucchini, chopped
- 10 ounces uncooked couscous
- 1/2 cup raisins
- 1 tablespoon chopped fresh basil or 1 teaspoon dried basil
- 1/2 teaspoon powdered saffron
Recipe
- 1 cut chicken into bite-size pieces, and sprinkle with salt and pepper.
- 2 melt butter in a large nonstick skillet over medium heat; add onion and garlic, and saute until tender.
- 3 add chicken and cook, stirring often, 8 minutes or until done.
- 4 add zucchini, and saute 3 minutes or until tender; remove from heat.
- 5 prepare couscous according to package directions; stir in raisins.
- 6 cover and remove from heat.
- 7 let stand 5 minutes or until liquid is absorbed.
- 8 stir in basil and saffron.
- 9 let stand 5 minutes.
- 10 stir couscous mixture into chicken mixture; cook over medium-high heat 2 minutes or until thoroughly heated.
- 11 serve immediately.
