Old Fashion Cherry Nut Bread

Ingredients
- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup unsalted butter (room temperature)
- 3/4 cup maraschino cherry
- 3/4 cup pecans
- 2 eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup whole milk
- 1/4 cup maraschino cherry juice
- 1/2 cup sour cream
Recipe
- 1 grease and line a standard 9′ loaf pan with parchment paper and non stick spray. coursely chop cherries and pecans. set aside.
- 2 cream butter and sugar in bowl of a stand mixer with the paddle attachment.
- 3 add eggs, vanilla, and sour cream beating until combined. scrape down sides.
- 4 in a separate bowl, whisk together flour, salt and baking powder.
- 5 in a liquid measuring cup combine milk and cherry juice.
- 6 with mixer on low and starting with flour mixture alternate flour mixture than milk mixture. mix until just combined.
- 7 stir in chopped cherries and chopped nuts with a spatula making sure to evenly mix through batter.
- 8 pour batter into prepared pan and bake in a 350 degree oven 60 minutes or until a light golden color or a toothpick inserted comes out clean.
- 9 cool in pan for 10 minutes. remove from pan and place on wire rack. cool completely before serving.
