Endive Leaves With Ratatouille

Ingredients

- cooking spray
- 1 small eggplant, cut in 1/2 inch cubes
- 1 small zucchini, diced
- 2 small tomatoes, diced
- 1 small onion, diced
- 1/4 cup fresh thyme, chopped
- 3 garlic cloves, minced
- black pepper
- 40 large belgian endive, leaves
Recipe
- 1 spray a large saucepan with cooking spray; add vegetables and saute 5 minutes.
- 2 add thyme and garlic. cover and cook over low heat until tender, about 10 minutes, stirring occasionally.
- 3 season to taste with pepper. cool.
- 4 spoon vegetable mixture into endive leaves. arrange filled leaves in a fan pattern on a large platter.
