Endive Leaves With Ratatouille

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 20
  • cooking spray
  • 1 small eggplant, cut in 1/2 inch cubes
  • 1 small zucchini, diced
  • 2 small tomatoes, diced
  • 1 small onion, diced
  • 1/4 cup fresh thyme, chopped
  • 3 garlic cloves, minced
  • black pepper
  • 40 large belgian endive, leaves

Recipe

  • 1 spray a large saucepan with cooking spray; add vegetables and saute 5 minutes.
  • 2 add thyme and garlic. cover and cook over low heat until tender, about 10 minutes, stirring occasionally.
  • 3 season to taste with pepper. cool.
  • 4 spoon vegetable mixture into endive leaves. arrange filled leaves in a fan pattern on a large platter.
