Mediterranean Vegie Fritters

Ingredients
- 2 tablespoons chutney or 2 tablespoons relish
- 1/2 cup parsley, chopped finely
- 300 g kumara, grated
- 1 zucchini, grated
- 2/3 cup plain flour
- 1 egg, lightly beaten
- salt and pepper
- vegetable oil, to fry
Recipe
- 1 mix all ingredients but oil in a bowl.
- 2 heat oil in large non stick fry pan.
- 3 spoon tablespoons of mixture into pan.
- 4 cook 2 -3 minutes each side till cooked and golden.
- 5 drain on paper towel.
- 6 serve with extra chutney.
