Mediterranean Vegie Fritters

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 2 tablespoons chutney or 2 tablespoons relish
  • 1/2 cup parsley, chopped finely
  • 300 g kumara, grated
  • 1 zucchini, grated
  • 2/3 cup plain flour
  • 1 egg, lightly beaten
  • salt and pepper
  • vegetable oil, to fry

Recipe

  • 1 mix all ingredients but oil in a bowl.
  • 2 heat oil in large non stick fry pan.
  • 3 spoon tablespoons of mixture into pan.
  • 4 cook 2 -3 minutes each side till cooked and golden.
  • 5 drain on paper towel.
  • 6 serve with extra chutney.
