Festival Sausage (crock Pot)

Ingredients
- Servings: 8
- 2 lbs kielbasa or 2 lbs smoked sausage, sliced
- 1 (20 ounce) can pineapple chunks in juice, drained and juice reserved
- 1 cup reserved pineapple juice
- 1/4 cup lemon juice
- 3 tablespoons cornstarch
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1 large green pepper, cut into chunks
- 1 large onion, cut into chunks
- 1/2 cup maraschino cherry, drained (yes, really)
Recipe
- 1 combine juices, brown sugar and cornstarch. boil until thick. stir in salt.
- 2 spray the crock pot with non-stick cooking spray.
- 3 put sausage, fruit and veggies in the crock pot, add the juice mixture.
- 4 cook on low 4 hours.
