Festival Sausage (crock Pot)

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • Servings: 8
  • 2 lbs kielbasa or 2 lbs smoked sausage, sliced
  • 1 (20 ounce) can pineapple chunks in juice, drained and juice reserved
  • 1 cup reserved pineapple juice
  • 1/4 cup lemon juice
  • 3 tablespoons cornstarch
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1 large green pepper, cut into chunks
  • 1 large onion, cut into chunks
  • 1/2 cup maraschino cherry, drained (yes, really)

Recipe

  • 1 combine juices, brown sugar and cornstarch. boil until thick. stir in salt.
  • 2 spray the crock pot with non-stick cooking spray.
  • 3 put sausage, fruit and veggies in the crock pot, add the juice mixture.
  • 4 cook on low 4 hours.
