Gerry's Zucchni Soup

Ingredients
- Servings: 8
- 2 large onions (chopped)
- 4 garlic cloves (minced)
- 1 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 tablespoon olive oil
- 6 medium zucchini (chopped roughly)
- 2 large potatoes (chopped)
- 1 1/2 tablespoons wine vinegar
- 8 cups broth (chicken or vegetable)
- parmesan cheese, to serve (optional)
Recipe
- 1 saute onions and garlic in olive oil until transparent.
- 2 add remaining ingredients bring to a boil.
- 3 simmer for 30 minutes or until potatoes and zucchni are soft.
- 4 puree in a blender or use a hand blender.
- 5 season to your taste
- 6 serve with parmesan cheese (optional).
