Gerry's Zucchni Soup

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 2 large onions (chopped)
  • 4 garlic cloves (minced)
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 tablespoon olive oil
  • 6 medium zucchini (chopped roughly)
  • 2 large potatoes (chopped)
  • 1 1/2 tablespoons wine vinegar
  • 8 cups broth (chicken or vegetable)
  • parmesan cheese, to serve (optional)

Recipe

  • 1 saute onions and garlic in olive oil until transparent.
  • 2 add remaining ingredients bring to a boil.
  • 3 simmer for 30 minutes or until potatoes and zucchni are soft.
  • 4 puree in a blender or use a hand blender.
  • 5 season to your taste
  • 6 serve with parmesan cheese (optional).
