Judys' Zucchini Relish

Total Time: 1 hr 25 mins Preparation Time: 1 hr Cook Time: 25 mins

Ingredients

  • 10 cups zucchini
  • 4 cups onions
  • 1 green bell pepper
  • 3 tablespoons canning salt
  • 6 cups sugar
  • 2 1/2 cups vinegar
  • 1/2 teaspoon ground black pepper
  • 3/4 teaspoon turmeric
  • 2 teaspoons celery seeds
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon allspice
  • 1 dash ground ginger
  • 1 1/2 cups water

Recipe

  • 1 grind zucchini, onion and green pepper on med grind.
  • 2 mix with canning salt and cover with cold water.
  • 3 let sit overnight.
  • 4 drain rinse and drain again.
  • 5 combine remaining ingredients and bring to a boil.
  • 6 add drained and rinsed zucchini mixture.
  • 7 simmer, don't boil, until vegetables are tender approx 20 - 30 minutes.
  • 8 seal immediately in hot sterilized pint jars.
