Jujube Sweet Pickles - Texas Style

Ingredients
- 1 quart chinese jujube, peeled
- 3 cups sugar
- 1 cup vinegar
- 1/2 cup water
- 1 teaspoon cinnamon
- 1/2 teaspoon clove
Recipe
- 1 cook fruit in syrup until done and steep in syrup overnight in the refrigerator.
- 2 reheat syrup and fruit to boiling.
- 3 pack fruit in jars while hot, cover with boiling syrup leaving 1/4" headspace; wipe edges of jar, screw on seals and rings and process in a boiling water bath for 15 minutes to seal.
