Jujube Sweet Pickles - Texas Style

Total Time: 8 hrs 15 mins Preparation Time: 8 hrs Cook Time: 15 mins

Ingredients

  • 1 quart chinese jujube, peeled
  • 3 cups sugar
  • 1 cup vinegar
  • 1/2 cup water
  • 1 teaspoon cinnamon
  • 1/2 teaspoon clove

Recipe

  • 1 cook fruit in syrup until done and steep in syrup overnight in the refrigerator.
  • 2 reheat syrup and fruit to boiling.
  • 3 pack fruit in jars while hot, cover with boiling syrup leaving 1/4" headspace; wipe edges of jar, screw on seals and rings and process in a boiling water bath for 15 minutes to seal.
