Merry Minestrone

Total Time: 1 hr 40 mins Preparation Time: 25 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 10
  • 1 tablespoon vegetable oil
  • 2 garlic cloves, finely chopped
  • 1 medium onions, chopped or 1/2 cup chopped onion
  • 4 cups chicken broth
  • 4 cups tomato juice
  • 1 cup water
  • 1 tablespoon dried basil leaves
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon pepper
  • 2 small zucchini, chopped or 2 cups chopped zucchini
  • 2 medium carrots, sliced or 1 cup sliced carrot
  • 2 medium celery ribs, chopped or 1 cup chopped celery
  • 1 (28 ounce) can diced tomatoes
  • 2 (15 ounce) cans kidney beans, rinsed and drained

Recipe

  • 1 heat oil in 8 quart dutch oven over medium heat. cook garlic and onion in oil about 2 minutes, stirring occasionally, until onion is tender.
  • 2 stir in remaining ingredients. heat to boiling; reduce heat.
  • 3 cover and simmer 1 hour.
