Ingredients

- 1 (6 ounce) jar red maraschino cherries
- 1 (6 ounce) jar green maraschino cherries
- 1/2 cup butter, softened
- 1 1/3 cups sugar
- 3 large eggs
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/8 teaspoon baking soda
- 1/2 cup sour cream
- 1/2 teaspoon vanilla extract
Recipe
- 1 drain cherries well; finely chop cherries; press them gently between paper towels to absorb excess moisture; set aside.
- 2 in a mixing bowl, beat butter, using and electric mixer on medium speed, until creamy.
- 3 gradually add sugar, beating until light and fluffy.
- 4 add eggs, 1 at a time, beating just until the yellow yolk disappears.
- 5 sift together the flour, salt, and baking soda; stir in cherries.
- 6 add flour mixture to butter mixture alternately with sour cream, beginning and ending with flour mixture.
- 7 beat batter on low speed just until blended after each addition.
- 8 stir in vanilla; pour batter into a greased/floured 9x5 inch loafpan.
- 9 bake in a 325° oven for 1 hour or until a pick comes out clean.
- 10 cool in the pan on wire rack 10 minutes.
- 11 remove from pan; cool completely on wire rack.
