Pasta Primavera With Smoked Gouda

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 16 ounces penne pasta
  • 2 tablespoons olive oil
  • 2 zucchini, sliced
  • 1 green pepper, diced
  • 2 carrots, diced
  • 8 ounces mushrooms
  • 3 small onions, diced
  • 3 garlic cloves, minced
  • 1 (14 1/2 ounce) can stewed tomatoes
  • 1 cup chicken broth
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons grated parmesan cheese
  • 2/3 cup shredded smoked gouda cheese

Recipe

  • 1 cook pasta according to direction on package.
  • 2 heat olive oil in skillet. add vegetables and saute until translucent (5 minutes).
  • 3 add garlic and cook 1 minute.
  • 4 stir in tomatoes, chicken broth, parsley, basil, oregano, pepper flakes.
  • 5 bring to a boil. reduce heat and simmer until sauce thickens.
  • 6 stir in cooked pasta and heat through.
  • 7 garnish with parmesan and gouda cheese.
