Peanut Chicken (((yummy)))

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 1 lb boneless chicken (bite-size, with skin on)
  • 2 tablespoons peanut oil
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 1 clove garlic (finely chopped)
  • 3 tablespoons smooth peanut butter
  • 4 -6 scallions (thinly sliced)
  • 1 cup unsweetened coconut milk
  • salt and pepper
  • rice
  • toasted peanuts (for garnish)
  • fresh cilantro (for garnish)

Recipe

  • 1 in a large non-stick skillet heat peanut oil& sesame oil over medium-high heat.
  • 2 add ginger& garlic& cook until aroma is released.
  • 3 stir in chicken pieces& cook until golden brown.
  • 4 stir in peanut butter.
  • 5 stir in scallions& coconut milk& simmer until thickened, about 3 minutes.
  • 6 season with salt& pepper& serve over rice.
  • 7 if desired, garnish with toasted peanuts& cilantro.
