Quick Beef & Broccoli Noodles

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 8 ounces egg noodles
  • 1 head broccoli, cut into small florets
  • 1 tablespoon sesame oil
  • 14 ounces beef, stir-fry strips
  • 4 scallions, sliced
  • 1 carrot, cut into matchsticks
  • 4 ounces baby corn
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon tomato ketchup
  • 2 garlic cloves, crushed
  • 1 tablespoon ginger, peeled and finely grated
  • 1 tablespoon wine vinegar

Recipe

  • 1 start by making up the sauce. mix the ingredients together in a small bowl. boil the noodles according to pack instructions. a minute before they are ready, tip in broccoli.
  • 2 meanwhile, heat the oil in a wok until very hot, then stir-fry the carrot and corn for 4 mins and then the beef for 2-3 mins until well browned. tip in the sauce, give it a stir, let it simmer for a moment, then turn off the heat. drain the noodles and broccoli, stir into the beef and serve straight away, scattered with scallions.
