Ingredients
- 1 tablespoon extra virgin olive oil
- 1 sweet onion, chopped
- 1 red pepper, chopped
- 2 ears corn on the cob, kernels cut off
- 1 large zucchini, sliced
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon black pepper
- 4 tablespoons grated parmesan cheese, divided
Recipe
- 1 saute onions and peppers in oil.
- 2 add everything but cheese and cook about 15 minutes.
- 3 toss with cheese at end.
