French Bread (bread Machine)

Total Time: 3 hrs 50 mins Preparation Time: 20 mins Cook Time: 3 hrs 30 mins

Ingredients

  • 2 large egg whites
  • 1 cup water
  • 3 cups bread flour
  • 1 tablespoon gluten
  • 2 teaspoons sugar
  • 1 3/4 teaspoons salt
  • 2 teaspoons fast rising yeast (or 2 1/2 t. bread machine yeast)
  • 2 large egg whites
  • 1 1/4 cups water
  • 4 cups bread flour
  • 1 tablespoon gluten, plus
  • 2 teaspoons gluten
  • 1 tablespoon sugar
  • 2 1/2 teaspoons salt
  • 2 1/4 teaspoons fast rising yeast (or 2 3/4 t. bread machine yeast)

Recipe

  • 1 using an electric mixer, beat the egg whites until almost stiff and soft peaks are formed.
  • 2 set crust on medium or dark, and program for the basic or french bread cycle.
  • 3 place all the ingredients in the pan according to the order in the manufacturer's instructions, adding the egg whites in with the water; press start.
  • 4 when the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • 5 let cool to room temperature before slicing.
