French Bread (bread Machine)

Ingredients
- 2 large egg whites
- 1 cup water
- 3 cups bread flour
- 1 tablespoon gluten
- 2 teaspoons sugar
- 1 3/4 teaspoons salt
- 2 teaspoons fast rising yeast (or 2 1/2 t. bread machine yeast)

- 4 cups bread flour
- 1 tablespoon gluten, plus
- 2 teaspoons gluten
- 1 tablespoon sugar
- 2 1/2 teaspoons salt
- 2 1/4 teaspoons fast rising yeast (or 2 3/4 t. bread machine yeast)
Recipe
- 1 using an electric mixer, beat the egg whites until almost stiff and soft peaks are formed.
- 2 set crust on medium or dark, and program for the basic or french bread cycle.
- 3 place all the ingredients in the pan according to the order in the manufacturer's instructions, adding the egg whites in with the water; press start.
- 4 when the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
- 5 let cool to room temperature before slicing.
