Italian-baked Zucchini

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 zucchini (6 inches long each)
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1/3 cup fresh grated romano cheese (can use parmesan and feta too)
  • 1/3 cup fine italian seasoned breadcrumbs
  • 1 tablespoon capers
  • 1 teaspoon oregano
  • 3 tablespoons vinegar

Recipe

  • 1 heat oven to 450°.
  • 2 trim zucchini and slice into 1/2 inch disks.
  • 3 sprinkle 1 t olive oil onto bottom of 9 by 13 pan.
  • 4 add zucchini and sprinkle it w/ salt and pepper.
  • 5 drizzle 1 t olive oil over this.
  • 6 bake for 10 minute.
  • 7 while it is baking mix cheese, bread crumbs, capers, and oregano together.
  • 8 add remaining oil and stir till crumbs are moistened.
  • 9 remove zucchini from oven and sprinkle w/ vinegar then stir.
  • 10 sprinkle bread crumbs on top.
  • 11 return to a 400° degree oven for 20 to 30 minutes.
  • 12 serve hot.
