Marli's Pasta Sauce

Total Time: 17 mins Preparation Time: 5 mins Cook Time: 12 mins

Ingredients

  • Servings: 4
  • 1/4 cup red lentil
  • 2 (400 g) cans crushed tomatoes
  • 1/2 small zucchini, very thinly sliced
  • 1 clove garlic, crushed
  • 1 small red onion, diced
  • 1/2 tablespoon olive oil
  • 1 teaspoon italian seasoning
  • 2 teaspoons soy sauce
  • 1 teaspoon sugar
  • 4 button mushrooms, sliced
  • herbs, of your choice

Recipe

  • 1 cook the red lentils in boiling water, drain& set aside.
  • 2 heat the oil in a saucepan& gently saute the garlic& onion.
  • 3 add the tomatoes, italian seasoning, soy sauce, sugar& herbs- simmer gently for 5 minutes.
  • 4 next add the red lentils, zucchini& mushrooms, then simmer a further 5 minutes.
  • 5 season to taste with salt& pepper.
  • 6 serve with your favourite pasta, topped with parmesan cheese if you desire.
