Michael's Grilled Zucchini

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 4 small zucchini or 4 medium zucchini
  • 1 teaspoon salt
  • 2 tablespoons balsamic vinaigrette

Recipe

  • 1 slice zucchini lengthwise.
  • 2 sprinkle salt onto open halves.
  • 3 let zucchini sweat (about 30 minutes).
  • 4 drizzle vinaigrette over halves. (we make our own. 1/3 balsamic vinegar to 2/3 olive oil).
  • 5 grill over hot coals until blackened and crisp, but still tender and juicy inside (about 15 minutes).
  • 6 serve with grilled polenta, fresh tomatoes, and a salad if serving vegetarian.
