Parmesan Wafers With Prosciutto And Figs

- 200 g parmesan cheese
- 4 ripe figs
- 8 slices prosciutto
Recipe
- 1 heat the oven to 180°c lay an egg ring on a non-stick tray. sprinkle an even layer of grated parmesan inside the ring. remove the ring and use it to make a second wafer next to the first. use these first two wafers as your guinea pigs, because you may have to adjust the heat of your oven to suit the rest.
- 2 bake 3 – 5 minutes, watching carefully until the cheese has melted into a soft wafer shape. remove from the oven while still bubbling, and leave for 1 minute. carefully lift off the wafers and lay them on a wire rack to cool and harden. adjust the oven temperature if necessary and continue the process until you have 8 wafers.
- 3 to serve, cut the figs into quarters. lay 2 slices of prosciutto on top of a parmesan wafer on each plat. top with 2 fig quarters and a final parmesan wafer and serve.
