Raisin-zucchini Spice Cupcakes

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 1 (18 1/4 ounce) package spice cake mix
  • 1 1/3 cups water
  • 1/4 cup vegetable oil
  • 3 eggs
  • 2 cups shredded zucchini
  • 1/2 cup raisins
  • 1/4 cup butter, softened
  • 1 3/4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 -2 tablespoon milk

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a large mixing bowl, combine the cake mix, water, oil and eggs; beat on low speed for 30 seconds. beat on medium speed for 2 minutes.
