Grilled Chicken With Squash Relish (south Beach Diet)

Ingredients
- Servings: 4
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 3/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 4 chicken breasts, boneless and skinless
- 1 medium yellow squash, diced
- 1 medium zucchini, diced
- 1/2 small red onion, chopped
- 1 cup fresh parsley leaves
- 2 tablespoons lemon juice
- 1 teaspoon extra virgin olive oil
Recipe
- 1 heat grill to medium and oil the grate.
- 2 combine first 5 ingredients and rub on chicken.
- 3 grill chicken for about 15 minutes until done turning 1/2 way through.
- 4 combine remaining ingredients and spoon evenly on top of cooked chicken.
