Grilled Chicken With Squash Relish (south Beach Diet)

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 4 chicken breasts, boneless and skinless
  • 1 medium yellow squash, diced
  • 1 medium zucchini, diced
  • 1/2 small red onion, chopped
  • 1 cup fresh parsley leaves
  • 2 tablespoons lemon juice
  • 1 teaspoon extra virgin olive oil

Recipe

  • 1 heat grill to medium and oil the grate.
  • 2 combine first 5 ingredients and rub on chicken.
  • 3 grill chicken for about 15 minutes until done turning 1/2 way through.
  • 4 combine remaining ingredients and spoon evenly on top of cooked chicken.
