Orange And Zucchini Cold Soup

Ingredients

- 2 shallots, finely chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh ginger, finely chopped
- 4 medium zucchini, sliced
- 2 1/2 cups chicken stock, hot
- 1/2 teaspoon orange zest
- 1/2 cup plain yogurt
- salt
- pepper
Recipe
- 1 in a casserole, cook the shallots in oil at medium heat for about 5 minutes. add ginger and zucchini. cook 5 minutes more.
- 2 add the chicken stock and cook at medium heat, 10 minutes. add orange zest. remove from the heat and let cool down.
- 3 purée in blender.
- 4 let cool. add the yogurt, salt and pepper.
- 5 put in fridge. adjust seasonning and serve cold.
