Paradise Pear Jam

Ingredients
- 1 orange
- 1 lemon
- 2 lbs ripe pears (about 6 large)
- 1/4 cup chopped maraschino cherry
- 1 (8 ounce) can crushed pineapple
- 1 package powdered fruit pectin
- 5 cups sugar
Recipe
- 1 remove rinds from orange and lemon in quarters; discard about half the part of rinds.
- 2 (scrape off with a spoon) slice rinds thinly.
- 3 chop orange and lemon, and discard seeds.
- 4 peel, core and grind pears.
- 5 combine all the fruits, including cherries and pineapple and its juice.
- 6 measure 4 1/2 cups of fruit into a large pan.
- 7 stir pectin into fruit.
- 8 place over high heat, stirring until mixture comes to a hard boil.
- 9 at once stir in sugar.
- 10 bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
- 11 remove from heat and skim.
- 12 stir and skim for 5 minutes to cool slightly, and prevent floating fruit.
- 13 ladle quickly into jars.
- 14 seal.
