Paradise Pear Jam

Ingredients

  • 1 orange
  • 1 lemon
  • 2 lbs ripe pears (about 6 large)
  • 1/4 cup chopped maraschino cherry
  • 1 (8 ounce) can crushed pineapple
  • 1 package powdered fruit pectin
  • 5 cups sugar

Recipe

  • 1 remove rinds from orange and lemon in quarters; discard about half the part of rinds.
  • 2 (scrape off with a spoon) slice rinds thinly.
  • 3 chop orange and lemon, and discard seeds.
  • 4 peel, core and grind pears.
  • 5 combine all the fruits, including cherries and pineapple and its juice.
  • 6 measure 4 1/2 cups of fruit into a large pan.
  • 7 stir pectin into fruit.
  • 8 place over high heat, stirring until mixture comes to a hard boil.
  • 9 at once stir in sugar.
  • 10 bring to a full rolling boil and boil hard for 1 minute, stirring constantly.
  • 11 remove from heat and skim.
  • 12 stir and skim for 5 minutes to cool slightly, and prevent floating fruit.
  • 13 ladle quickly into jars.
  • 14 seal.
