Peanut Sesame Noodles

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2/3 cup peanut butter (not natural)
  • 1 tablespoon garlic
  • 1 tablespoon ginger
  • 4 tablespoons low sodium soy sauce
  • 3 tablespoons thai sweet chili sauce (mae ploy)
  • 2 tablespoons dark brown sugar
  • 1 teaspoon hot sesame oil
  • 2 teaspoons sambal oelek (chili garlic paste)
  • 1 tablespoon cider vinegar
  • 1 tablespoon worcestershire sauce
  • 1 lime, juice of
  • 1/2 cup chicken broth
  • 12 ounces thin spaghetti noodles (or udon, 2 packs of ramen, chinese noodles can be substituted)

Recipe

  • 1 boil noodles until done in water with 2 tablespoons soy sauce instead of salt. drain and chill. combine the rest of the ingredients in a sauce pot and simmer until thickened, 5 to 10 minutes. toss with noodles and chill until time to serve or enjoy warm.
