Pepperoni Frittata

Ingredients

- 1/2 cup onion, chopped
- 1 cup sliced zucchini, sauteed or 1 cup cut broccoli, cooked
- 1/2 cup cauliflower, cooked
- 2 -3 tablespoons olive oil
- 5 eggs, slightly beaten
- 1/3 cup grated parmesan cheese
- 3 1/2 ounces sliced pepperoni
Recipe
- 1 saute onion in olive oil over medium heat until tender.
- 2 add zucchini or broccoli and cauliflower to onions.
- 3 in a seperate bowl beat eggs and cheese together until blended.
- 4 add pepperoni to egg mixture.
- 5 pour over vegetables in skillet.
- 6 cook on low heat about 15 minutes until just about set.
- 7 finish cooking by putting pan under the broiler for about 1 minute until completely set.
