Pepperoni Frittata

Total Time: 31 mins Preparation Time: 15 mins Cook Time: 16 mins

Ingredients

  • Servings: 6
  • 1/2 cup onion, chopped
  • 1 cup sliced zucchini, sauteed or 1 cup cut broccoli, cooked
  • 1/2 cup cauliflower, cooked
  • 2 -3 tablespoons olive oil
  • 5 eggs, slightly beaten
  • 1/3 cup grated parmesan cheese
  • 3 1/2 ounces sliced pepperoni

Recipe

  • 1 saute onion in olive oil over medium heat until tender.
  • 2 add zucchini or broccoli and cauliflower to onions.
  • 3 in a seperate bowl beat eggs and cheese together until blended.
  • 4 add pepperoni to egg mixture.
  • 5 pour over vegetables in skillet.
  • 6 cook on low heat about 15 minutes until just about set.
  • 7 finish cooking by putting pan under the broiler for about 1 minute until completely set.
