Pot Luck Pasta Salad

Ingredients
- 4 ounces whole wheat pasta, corkscrew shape
- 2 1/2 black olives, sliced
- 1 green pepper, medium, chopped (about 1 cup)
- 1 red bell pepper, medium, chopped (about 1 cup)
- 3/4 grape tomatoes, halved (about 10 tomatoes)
- 1 summer squash, halved lengthwise and sliced (about 1/2 cup)
- 1 zucchini, halved lengthwise and sliced (about 1/2 cup)
- 1 cup peas, thawed
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 teaspoon oregano
- 1 tablespoon honey dijon mustard or 1 tablespoon dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 garlic cloves
Recipe
- 1 cook pasta according to package directions.
- 2 combine all ingredients through peas.
- 3 dressing: mix together oil, lemon juice, oregano, mustard, salt, pepper and garlic.
- 4 toss salad with dressing.
- 5 chill 2 hours.
