Potato Harvest Soup

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 (14 1/2 ounce) can reduced-sodium chicken broth
  • 1/2 cup water
  • 1 lb potato, cut into 1/2 inch cubes
  • 1 medium carrot, cut into 1/4 inch slices
  • 1 lb boneless skinless chicken breast, cut into 1 inch chunks
  • 1 medium zucchini, cut into 1/4 inch slices
  • 3 green onions, sliced
  • 2 tablespoons dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 in a 3 quart saucepan over medium heat, combine broth and water.
  • 2 cover and bring to a boil.
  • 3 add potatoes and carrot; cover and cook for 5 minute.
  • 4 add chicken, zucchini, onions, and basil; bring to boil, reduce heat, cover and cook until chicken is opaque throughout, about 7 minutes.
  • 5 season with salt and pepper.
