Passionately Pink Tropical Fruit Salad

Ingredients

- 1 whole pineapple, cut into chunks
- 2 cups chopped fresh mango
- 1 carambolas or 1 star fruit, sliced
- 2 ripe wrinkled passion fruit, split, with pulp removed and seeds strained out
- 1 (12 ounce) jar maraschino cherries, drained with syrup reserved
- 1/4 cup sweetened flaked coconut
- 1 cup miniature marshmallows or 1 cup pink miniature marshmallow
- 1 cup sour cream
- 1/4 cup powdered sugar
Recipe
- 1 mix fruits and marshmallows together in a large bowl.
- 2 whisk together sour cream and powdered sugar with 1/4 cup of the reserved cherry syrup; discard the rest.
- 3 gently fold sweetened sour cream dressing into fruit.
- 4 cover and chill for several hours before serving (shows as cooking time).
