Passionately Pink Tropical Fruit Salad

Ingredients

  • Servings: 6
  • 1 whole pineapple, cut into chunks
  • 2 cups chopped fresh mango
  • 1 carambolas or 1 star fruit, sliced
  • 2 ripe wrinkled passion fruit, split, with pulp removed and seeds strained out
  • 1 (12 ounce) jar maraschino cherries, drained with syrup reserved
  • 1/4 cup sweetened flaked coconut
  • 1 cup miniature marshmallows or 1 cup pink miniature marshmallow
  • 1 cup sour cream
  • 1/4 cup powdered sugar

Recipe

  • 1 mix fruits and marshmallows together in a large bowl.
  • 2 whisk together sour cream and powdered sugar with 1/4 cup of the reserved cherry syrup; discard the rest.
  • 3 gently fold sweetened sour cream dressing into fruit.
  • 4 cover and chill for several hours before serving (shows as cooking time).
