Easy Garden Bake

Ingredients

• Servings: 4
• 1 cup chopped zucchini
• 1 large tomato, chopped (1 cup)
• 1 medium onion, chopped (1/2 cup)
• 1/3 cup grated parmesan cheese
• 1/2 cup bisquick heart smart mix
• 1 cup nonfat milk (skim)
• 1/2 cup fat-free fat-free liquid egg product or 2 eggs
• 1/2 teaspoon salt
• 1/8 teaspoon pepper

Recipe

• 1 heat oven to 400°f.
• 2 lightly spray 8-inch square baking dish or 9-inch pie plate with cooking spray.
• 3 sprinkle zucchini, tomato, onion and cheese in baking dish.
• 4 in medium bowl, stir remaining ingredients until blended.
• 5 pour over vegetables and cheese.
• 6 bake uncovered about 35 minutes or until knife inserted in center comes out clean.
• 7 cool 5 minutes.
