Ratatouille

Ingredients

  • 1 medium eggplant, peeled and finely chopped
  • 1 zucchini, chopped
  • 1/4 cup sun-dried tomato packed in oil, drained and chopped
  • 1 yellow bell pepper, finely chopped
  • 1 medium red onion, finely chopped
  • 1 garlic clove, crushed
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons fresh basil, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 combine all ingredients in slow cooker. cover and cook on low for 6-7 hours, or until veggies are tender. serve over pita or sourdough rolls, cut into wedges.
