Ingredients
- 1 medium eggplant, peeled and finely chopped
- 1 zucchini, chopped
- 1/4 cup sun-dried tomato packed in oil, drained and chopped
- 1 yellow bell pepper, finely chopped
- 1 medium red onion, finely chopped
- 1 garlic clove, crushed
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons fresh basil, chopped
- 2 tablespoons olive oil
- 2 tablespoons wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 combine all ingredients in slow cooker. cover and cook on low for 6-7 hours, or until veggies are tender. serve over pita or sourdough rolls, cut into wedges.
