Pineapple Express Chicken

Ingredients
- 1 1/2 lbs boneless skinless chicken thighs
- 1/2 teaspoon salt
- 1/2 teaspoon curry powder
- 2 tablespoons olive oil
- 1 red bell pepper, cut into strips
- 1 pineapple, peeled, cored and cut into chinks
- 1 serrano pepper, thinly sliced
- 1/4 cup sweetened coconut milk
- 1 tablespoon brown sugar
Recipe
- 1 sprinkle chicken with salt and curry powder.
- 2 i a large skillet, heat oil over high heat.
- 3 add chicken and quickly brown chicken on all sides.
