Pineapple Express Chicken

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 2 tablespoons olive oil
  • 1 red bell pepper, cut into strips
  • 1 pineapple, peeled, cored and cut into chinks
  • 1 serrano pepper, thinly sliced
  • 1/4 cup sweetened coconut milk
  • 1 tablespoon brown sugar

Recipe

  • 1 sprinkle chicken with salt and curry powder.
  • 2 i a large skillet, heat oil over high heat.
  • 3 add chicken and quickly brown chicken on all sides.
