Mashed (not Potatoes) Squash

Total Time: 18 mins Preparation Time: 6 mins Cook Time: 12 mins

Ingredients

  • 6 medium zucchini, thinly sliced
  • 1/2 cup water
  • 1/2 tablespoon salt
  • 1 teaspoon pepper
  • 2 tablespoons pesto sauce (to taste)

Recipe

  • 1 boil zucchini, water and seasonings covered over medium high heat for 6 minutes. uncover and boil for 6 minutes more. strain zucchini to remove moisture.
  • 2 puree in a food processor or mash and add pesto to taste.
  • 3 wonderful now or reheats well.
