Individual Mediterranean Frittatas

Ingredients
- 1 teaspoon olive oil
- 1/4 cup thinly sliced red onion
- 1/4 cup chopped red bell pepper
- 3/4 cup chopped zucchini
- 8 egg whites or 1 cup egg substitute
- 1/3 cup feta
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon black pepper
- cooking spray
- 1 tablespoon grated parmesan cheese
Recipe
- 1 preheat oven to 350°.
- 2 heat olive oil in a nonstick skillet over medium heat.
- 3 add onion; cook 1 minute.
- 4 add bell pepper and zucchini; cook 4 minutes.
- 5 combine egg whites, feta cheese, chopped basil, and black pepper, stirring well with a whisk.
- 6 spoon vegetable mixture evenly into 6 muffin cups coated with cooking spray; pour egg mixture over vegetable mixture, and sprinkle with parmesan cheese.
- 7 bake at 350° for 18 minutes, or until set.
