Individual Mediterranean Frittatas

Total Time: 42 mins Preparation Time: 20 mins Cook Time: 22 mins

Ingredients

  • 1 teaspoon olive oil
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped red bell pepper
  • 3/4 cup chopped zucchini
  • 8 egg whites or 1 cup egg substitute
  • 1/3 cup feta
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon black pepper
  • cooking spray
  • 1 tablespoon grated parmesan cheese

Recipe

  • 1 preheat oven to 350°.
  • 2 heat olive oil in a nonstick skillet over medium heat.
  • 3 add onion; cook 1 minute.
  • 4 add bell pepper and zucchini; cook 4 minutes.
  • 5 combine egg whites, feta cheese, chopped basil, and black pepper, stirring well with a whisk.
  • 6 spoon vegetable mixture evenly into 6 muffin cups coated with cooking spray; pour egg mixture over vegetable mixture, and sprinkle with parmesan cheese.
  • 7 bake at 350° for 18 minutes, or until set.
