Harvest Stew

Ingredients

  • Servings: 8
  • 2 lbs beef stew meat, cubed
  • 1 cup beef broth
  • 3 cups butternut squash, cubed
  • 4 medium tomatoes, chopped
  • 1/2 cup chopped onion
  • 3/4 teaspoon dried marjoram
  • 3/4 teaspoon dried savory
  • 3 medium zucchini, cubed
  • salt and pepper
  • 6 cups cooked polenta

Recipe

  • 1 combine all ingredients except zucchini, salt, pepper and polenta in a slow cooker.
  • 2 cover and cook on low 6-8 hours, adding zucchini during the last 45 minutes.
  • 3 season to taste with salt and pepper. serve over polenta.
