Low-carb Lettuce Wraps

Ingredients
- 1/2 lb lean ground turkey
- 1 zucchini
- 1 (8 ounce) can sliced water chestnuts
- 1/4 cp. soy sauce
- 2 tablespoons parmesan cheese
- 1 head butter lettuce
- 1/4 cp. salsa
- olive oil or grapeseed oil
Recipe
- 1 finely chop your zucchini and water chestnuts & set aside.
- 2 wash butter lettuce.
- 3 combine turkey, parmesan cheese, & salsa in a bowl.
- 4 once combined, brown turkey slightly.
- 5 add zucchini and chestnuts, also soy sauce.
- 6 {it's important to have the salsa and soy sauce in the turkey, not just for flavor but because lean turkey tends to get really dry when cooked}.
- 7 once meat is cooked thoroughly and veggies are tender remove from heat and let cool just for a few minutes {the hot meat tends to really wilt the lettuce}.
- 8 and -- that's it! easy, quick, healthy & yummy! i top mine off with a little more salsa {los pastores is my favorite!}.
