Low-carb Lettuce Wraps

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1/2 lb lean ground turkey
  • 1 zucchini
  • 1 (8 ounce) can sliced water chestnuts
  • 1/4 cp. soy sauce
  • 2 tablespoons parmesan cheese
  • 1 head butter lettuce
  • 1/4 cp. salsa
  • olive oil or grapeseed oil

Recipe

  • 1 finely chop your zucchini and water chestnuts & set aside.
  • 2 wash butter lettuce.
  • 3 combine turkey, parmesan cheese, & salsa in a bowl.
  • 4 once combined, brown turkey slightly.
  • 5 add zucchini and chestnuts, also soy sauce.
  • 6 {it's important to have the salsa and soy sauce in the turkey, not just for flavor but because lean turkey tends to get really dry when cooked}.
  • 7 once meat is cooked thoroughly and veggies are tender remove from heat and let cool just for a few minutes {the hot meat tends to really wilt the lettuce}.
  • 8 and -- that's it! easy, quick, healthy & yummy! i top mine off with a little more salsa {los pastores is my favorite!}.
